How To Make Lactose Free Yogurt

If you are in the lactose free camp or on the low-FODMAP diet protocol, this will be a game changer for you. When I went through the low FODMAP protocol, I had such a tough time finding a lactose free yogurt. I had to go to a specialty store just for yogurt, and I wasn’t about to do that every week.
Instead, I discovered you can make the easiest yogurt in your Instant Pot. I thought… why not start with a quality lactose free yogurt and make my own with lactose free milk?! I tried it…and it’s the easiest thing ever. Now I make it for my family every other week from my yogurt starter with this simple process. Goodbye special grocery runs for one special item!

Why you will love this recipe:
Like I said before, I really don’t know how this recipe could get any easier. It still blows my mind every time I make it. All you do is pour your milk in the Instant Pot, add four big spoonfuls of yogurt, stir, and turn on the yogurt setting. It is really that simple.
You don’t have to worry about precise temperatures, the IP does that for you!
I also use Fairlife milk. This milk is higher in protein than normal milk. Therefore, you get a higher protein yogurt too!
You can use your favorite lactose free yogurt as a starter, and your yogurt will have all of the same wonderful good bacteria in it. The yogurt I used was full of many different live active cultures. It made me so happy to know my homemade yogurt had the same strains too.

Tips:
Think through what time your yogurt will be done cooking. I like to set mine for the 8 hour mark. Once I set it to where it stopped cooking in the middle of the night. So it was at an unsafe temperature for too long. I had to throw out the entire batch! Now I wait to make it until I know I’ll be around when it finishes! Lesson learned!
Start with a quality lactose free yogurt to get lots of healthy bacteria. I used Green Valley Organics. I loved what I saw on the ingredients list. The next time you make it, you can use your own starter if you’d like.
The longer you let your yogurt cook in the Instant Pot, the more tangy flavor you’ll get. You can play around with what you like. You’ll want to do at least 6 hours. I like to do 8 hours.
If you want a thicker Greek yogurt, you can strain the yogurt after it has finished. You will find the yogurt thickens as it cools. You might want to wait to see how much it thickens before you mess with it.
I like to use whole milk yogurt for a creamier outcome.

Does every Instant Pot have a yogurt setting?
No, make sure your Instant Pot has a yogurt setting before trying this recipe. I haven’t tried this recipe any other way.
Tools:
- Instant Pot with the yogurt setting.
- Whisk.
- Glass Jar or Glass Mason Jars
Ingredients:
- Two containers of Fairlife Milk.
- Plain Lactose Free yogurt or your own lactose free yogurt cultures from previous batch.

How To Make Lactose Free Yogurt in the Instant Pot:
- Pour milk from two containers or Fairlife Milk into Instant pot.
- Add four heaping tablespoons of lactose free yogurt of choice.
- Mix together with a whisk.
- Place Instant Pot top on Instant Pot and set the valve to the set pressure release valve to venting. Press Yogurt button. Adjust time to your preference, and seal the top shut. Do not open the pot until at least 6 hours.
- The Instant Pot will count up instead of down with yogurt.
- Once the yogurt is done, you can transfer the yogurt into glass jars to store in your refrigerator.

Storage:
You can store homemade yogurt up to two weeks in the refrigerator in an airtight container.
It is recommended that you make your next batch with a homemade culture that is no longer than 7 days old.
What To Serve Lactose Free Yogurt With:
You can mix plain yogurt with maple syrup, any type of sugar, vanilla extract, fresh fruit, or nut butter.
Try it with our Overnight Oats.
Mix it with a fruit chia jam.
Or you can use it in place of sour cream on Taco Tuesdays!
You can try to make a different flavor with different fruity add ins.

Yes! The Fair Life is lactose free. I have also used other lactose free milks, and it’s turned out great too!
