Making garlic infused oil is so simple and a way to really pump of the flavor without adding actual garlic to a dish if you are having to avoid it.
Or for those that can have garlic, this recipe can just add an extra punch of flavor. Sometimes raw garlic can be too overwhelming for a dish, especially one that isn’t going to get cooked, so this recipe is perfect for adding that yummy flavor without being overwhelming.

Homemade Garlic Oil Tips
- Choose a healthy oil like olive oil or avocado oil to make homemade garlic oil. These are full of balanced healthy fats rather than unhealthy ones like PUFAs. Avoid corn, soy, vegetable, and canola oils.
- Want a more intense garlic flavor? Add more garlic during the infusion process.
- Infuse at a low temperature. Too high of a temperature can burn the garlic and make the oil go bad.
- If you are pinched for time and are just making a recipe on-the-go, you can also just cook garlic in a little bit of oil, strain out the garlic, and then proceed with a recipe.
- While this recipe is obviously geared towards garlic, you can also substitute with onions, or a combination of garlic and onions.
- Don’t Have a fine mesh strainer? No biggie, you can also use cheese cloth to strain.
Ways To Use Garlic Oil: What is it good for?
It can be used for a wide variety of dishes. Sauté vegetables in it, add it to mashed potatoes, marinades, salad dressing, garlic bread, drizzle on pizza, cook eggs, or pan fry meats in it, and so many more options.
If the recipe calls for garlic, you can probably substitute garlic oil.
Can I put raw garlic in olive oil?
One concern with making garlic oil is the risk of botulism due to garlic being a low acid food and botulism surviving in aerobic (aka it doesn’t need oxygen) environments.
While botulism in the U.S. is relatively low, only about 145 cases a year (only 15% coming from food), it is still something not worth the risk.
To be safe, you want to heat the oil, refrigerate and only keep it for up to 3 days. The USDA had originally recommended no more than 3 days for storage in the refrigerator. Then they recently updated it to 7 days refrigeration. It is up to you, but we have decided to stay within the 3/4 day mark and then freeze leftovers. (source)

Why is garlic oil low FODMAP?
Fructans in garlic are water soluble, so essentially when you are making this recipe, you are taking the essence of the garlic and infusing it into the oil. While also not transferring any of the carbohydrates along with it.
This can also be done with onions.
Infused oils have been tested by Monash University and found to be low FODMAP.

Ingredients
Garlic: whole cloves, crushed, or halved. Crushing and halving the garlic with give you a more intense flavor.
Oil: choose a high quality olive oil or avocado oil. Avocado tends to have a more mild flavor than olive. You could use another type of oil, these tend to not be as healthy because they contain unbalanced amount of omega 3’s, 9’s and 6’s.
How To Make Garlic Infused Oil:
To a small sauce pan, add oil and heat on low heat.
While the oil is heating, smash and peel the garlic. For a more intense garlic flavor, crush or halve the garlic. I tend to crush because I find it easier to peel the garlic in I place it on the cutting board and smash it with knife.
Peel and just toss into the oil.
Cook over low heat until the oil just gets warm to touch, but not hot.
Turn off heat and allow to steep for 1-2 hours.
Strain garlic.
Place in a air tight container and store in the fridge or in the freezer.
Storage:
Store in an airtight container. I like to use a mason jar. Place in the fridge for 3-4 days max. Freeze for an extended period of time. For easy freezing and storage, pour into ice cube trays, freeze, and then pop out and place in a zip-lock to store in the freezer. When you need one for a dish, you can just grab one from the freezer and melt in the microwave or place on a pan to heat.
How Long Does Garlic Oil Last?
You will want to discard after 4 days. This is because garlic is a low acid food and you want to reduce your risk of botulism poisoning. (See more info above)
For longer term storage, you can freeze garlic oil. Freeze in ice cube trays for perfect single size serving.
