Your whole family will love this recipe on weekend mornings. It’s such a treat, and yet this lemon pancake recipe is high protein and super easy to whip together. It is full of bright lemon flavor, and these will keep you fueled with quality and real food ingredients. If you are a lemon lover, these are sure to please!
On top of that you literally throw all of the ingredients into a high powered blender, and then you can cook them. This means less work and clean up for you!
Tips:
If you are sensitive to bitter flavors, you’ll want to zest your lemon and use lemon zest instead of the outer peel like you’ll see in the video. I usually make this recipe as fast as I can (ha!), so for me that means cutting out the zesting and throwing in the outside of the lemon peel. I don’t notice the bitterness, but you might if you have a sensitive pallet.
I use oat flour. All I do to make this is throw dry oats into my high powdered blender and blend until a flour has formed. This takes about 30 seconds.
The baking powder is another important ingredient. There are some that also give off a bitter flavor. I use Trader Joe’s brand, and it is great!
Heat up your cooking pan with cooking oil or nonstick cooking spray prior to pouring any lemon pancake batter. This will help you make the perfect pancake without burning it.

- High powered blender (if you don’t have one, you can simply mix the ingredients on your own).

Are these lemon protein pancakes healthy?
Yes! They are made with real whole food ingredients. The oats are whole grain and full of fiber. And the eggs and Greek yogurt will give you a good dose of protein.
What makes pancakes fluffy?
The baking powder gives these a lot of their fluff. The best pancakes are fluffy, so don’t skip out on quality baking powder.
How do I not burn pancakes?
The temperature of the pan is important. Medium low heat seems to be the way to go. Watch for bubbles to form on top of the pancakes, and then flip for the perfect pancake. The first pancake always seems to take a little longer, so don’t be fooled and walk away when the next ones cook!
Ingredients:
- 4 eggs
- 3/4 cup plain yogurt (choose Greek yogurt for more protein)
- 2 Tablespoons maple syrup or sweetener of choice
- Lemon juice of 1 lemon
- Lemon zest from 1 lemon
- 1 tsp vanilla
- 1 tsp coconut oil
- 1 and 3/4 cup oat flour*
- 1 Tablespoon baking powder
How To Make Healthy Lemon Pancakes:
- Gather all ingredients.
- Warm up your skillet to medium-low heat and add your favorite cooking oil, cooking spray, or a little bit of butter to the skillet.
- Add all other ingredients into a high powdered blender. Blend until well mixed.*
- Let the batter sit at least 1 minute.
- Pour about 1/4 cup of batter on your skillet. Cook until you see bubbles on the top, then flip and cook about 1 minute longer on the other side.
- You can keep the pancakes in the oven on low on a baking sheet if desired. Otherwise, serve right away!
- *If you don’t have a blender. Simply mix the wet ingredients in a medium bowl. Mix all of the dry ingredients in a large mixing bowl. Pour wet mixture into the dry ingredients and mix until a thin batter is formed.
Other Variations:
You could make this with different types of yogurt like regular plain yogurt, vanilla yogurt, or even lemon yogurt for a stronger lemon flavor.
Try different toppings like melted butter, fresh berries, fresh blueberries, ricotta cheese, blueberry sauce, or good ole maple syrup.
Storage:
Pancakes keep fine in the fridge up to one week in an airtight container.
You can all store these in the freezer with parchment paper in between the cakes. Simply thaw in the fridge or defrost in the microwave.
