Gluten Free Chocolate Mug Cake

I created this recipe based off of my chocolate mug pancake recipe. One night after dinner I was still a tad hungry, and I wanted a little dessert that wouldn’t make me feel junky.
I cut down the mug pancake recipe and pumped up the cocoa powder and chocolate chips. Out popped a decadent chocolate mug cake!

Tips:
- Make sure to use a large mug or oven safe ramekin that is microwave safe.
- You also want a little space at the top of your coffee mug so that your mug cake batter doesn’t overflow in your microwave while it is cooking. On the other hand, if it is too big, the batter will shrink down and it isn’t too pretty. If you are making this for others and you want it to be picture perfect, use a smaller sized mug.
- Choose quality cocoa powder. This makes all of the difference in taste. I love this one. Quality cocoa powder is also higher in many nutrients like Magnesium. Most Americans are deficient in Magnesium, and it does hundreds of things inside your body. Dark chocolate is a fun way to pump up Magnesium in your body!
- Using a small blender and then letting the batter sit for a minute will help it to be a smooth consistency. If you don’t have a blender, just smash the banana really well with a fork instead.

- Cocoa power like this one
- Banana
- Egg
- Your choice of nut butter (I have used almond butter and peanut butter)
- Chocolate Chips
- Vanilla Extract
- Splash of Milk of choice (regular milk, coconut milk, unsweetened almond milk, or any nut milk all work great)
- Pinch of Salt
Tools
- Blender like this one or food processor*
- Large mug, small bowl, or oven-safe ramekin
- *If you don’t have a blender or processor you can simply smash your banana with a fork instead.
FAQ
Do I need a blender?
The best way I’ve found is to throw all of your ingredients into a single serve blender (they always blend best for me) and blend well for about 10-20 seconds. If you don’t have one, you can easily substitute a small food processor or just use a fork to smash your banana and then add the rest of the ingredients (more on how below).
Can I make an egg-free version?
I personally have not tried making this why a flax egg or a chia egg. If you do… please let me know how it turns out in the comments!
Can I make this in the oven instead?
Most definitely! If you are on team no microwave just preheat your oven to 375 degrees. Pour the batter into a oven safe ramekin or oven safe mug and place it in the oven.
Check the gluten-free mug cake starting at 12 minutes. Every oven is a little different so it could take more time. Just poke a toothpick in the center. If it comes out with wet batter, cook for longer. Cook until the toothpick or fork comes out clean.
How many servings does this make?
This is a single serving dessert. If you go the oven route, you could make multiple at once!
What should be the power of your microwave?
In my opinion, it doesn’t really matter. Every microwave is different. If you are worried about overcooking, start at a lower time and check it as you go.
Is this recipe healthy?
Yes! Quality cocoa powder is rich in Polyphenols and nutrients that provide many health benefits. Some think it even has cancer fighting properties!
Eggs are nutritional powerhouses! They are rich in protein, choline, DHA, and Omega-3. If you can do pasture raised eggs, the nutrient density is even higher!
Bananas will get you potassium. I could go on and on. This is a healthy gluten free and paleo mug cake. Your body will thank you for a healthy dessert.
How to make this gluten free chocolate mug cake recipe:
Blender or Food Processor Version
Throw all of your ingredients (except chocolate chips) into your blender and blender until completely smooth.
Pour the batter into your favorite coffee mug. Sprinkle chocolate chips evenly over the batter. They will sink and that’s ok.
You don’t want to overcook this either. It will be chewy instead of a nice moist cake.
Fork Smashing Version
First smash your banana as much as you can with a fork. Add all wet ingredients on top and stir. In a separate bowl add all of the dry ingredients and mix together. Add the wet ingredients and dry ingredients. Pour batter into mug, add chocolate chips, and cook as desired.
Microwave Version
Microwave for 60 seconds. Then continue to do so in 30 second increments until it is cooked through. You can check by poking a fork or toothpick in the center. When it comes out clean, it is finished.
Oven Baking Version
Preheat oven to 375 degrees. Pour the batter into a oven safe ramekin or oven safe mug and place it in the oven.

- 1 teaspoon milk of choice
- 1 teaspoon nut butter of choice
- Pinch of salt
- 1/2 teaspoon vanilla
- 2 Tablespoons chocolate chips (or desired amount)
Instructions
